Cowboy Chop Recipe & Preparation Ingredients: Double R Ranch Co. Cowboy Chop (Bone-in Ribeye Chop) Salt & Pepper Murray River Flake Salt STEAKHOUSE STYLE : This is our favorite method to prepare thicker steaks- a quick skillet sear followed by an oven finish to desired doneness. 1. Heat oven to 350°F. Meanwhile, heat 12-inch cast iron skillet* over medium heat until hot. Season steaks with salt and pepper or your favorite seasoning blend; place steaks in skillet. 2. Brown steaks 4 minutes, turning once. Place skillet into preheated oven; cook according to chart, turning once. 3. Remove from oven when internal temperature reaches 135°F for medium rare (approx. 40 to 50 minutes); 150°F for medium doneness (approx. 51 to 61 minutes)**. 4. Remove steaks from skillet; tent loosely with aluminum foil. Let stand 5 to 10 minutes. (Temperature will continue to rise about 10°F to reach 145°F for medium rare; 160°F for medium doneness.) * Guidelines were developed using Lodge Pro-Logic 12-inch square seasoned cast iron griddle (skillet) . New skillets may cause beef to stick for first several uses. Until skillet is fully seasoned, brush skillet with a small amount of oil. **Size of steaks and cooking equipment may alter cooking time-always use an instant-read meat thermometer to determine appropriate doneness.
