1 tablespoon garlic chile sauce
1 tablespoon honey
3 tablespoon rice wine vinegar
dash fish sauce
20 pieces brussel sprouts, quartered
1/4 cup fine shredded red cabbage
5-6 pieces red onion, thinly sliced
3-4 jalapeno, thinly sliced
1/4 cup bean sprouts
1/8 cup basil
1/8 cup cilantro
2 ounces dressing
Garnish with black and white sesame seeds
Garnish with more cilantro
To build the salad:
1. Fry the brussel sprout pieces in a 350 degree fryer until crisp and brown. Place in a clean bowl and toss with salt, pepper and remaining ingredients.
2. Place on a rectangle plate, down the center building the ingredients up for a nice presentation.
3. Garnish with sesame seeds and top with fresh cilantro.
For the dressing:
Blend all of the ingredients and season with salt and pepper. Taste and adjust.
