Chicken Barley Pilaf

Chicken Barley Pilaf


1 ½ T          Garlic Flakes   

12 oz              Diced Chicken, cooked
1 ½ T               Onion Flakes   

¾ cup             Dry Barley
1 ½ T               Parsley   

1 ½ cup        Chicken Broth, low-sodium
2 ¼ t                Lemon Pepper   

1 ½ cup          Frozen Carrots     

⅓ cup             Green Onions


Preheat oven to 400°F.   

Prepare Chicken Mixture
Mix garlic flakes, onion flakes, parsley, and lemon pepper together.  Add frozen chicken pieces to seasonings and mix well; let set for two hours to overnight in the refrigerator.

Prepare Dish
Evenly spread uncooked barley over bottom of baking pan.  Top with seasoned chicken, spread evenly.  Spread carrots over chicken.  Pour chicken broth over mixture.  Cover tightly with foil and bake for 45 minutes.

Finish Dish
Sprinkle sliced green onions over dish after cooking. 

Chef Tips
Adding the seasonings to the poultry before cooking in the dish will enhance the flavor of the chicken.
This is a very simple, yet delicious dish.  It is very important to top with green onions for garnish and flavor.
