Chef Lou's Baked Pita Pie
2 tablespoons olive oil
2 pieces pita bread, cut into 1/8’s
¾ cup feta cheese crumbled
½ cup mixed chopped olives
2 tablespoons fresh basil
¼ cup sliced red onions
½ cup chopped reconstituted sundried tomatoes
2 egg, well beaten
½ cup milk
½ cup flour
1 tablespoon olive oil
Combine all ingredients
Add 1 teaspoon black pepper
Zest from 1 lemon
Preheat oven to 375 degrees.
Liberally brush a 10-inch cake pan with olive oil.
Lay pita chips evenly in pie pan.
Sprinkle with feta, olives, onions, basil, and tomatoes.
Pour batter evenly over pita chips.
Sprinkle with black pepper and bake for 18-22 minutes.
Remove pie from oven and cut into 4 pieces.
Serve with yogurt lemon sauce (recipe below).
1-cup plain yogurt
Juice & zest from 1 lemon
½ teaspoon toasted cumin
Combine until ready to use.
