Chef Lou’s Tomato Marmalade
Rind from 1 Orange
Rind from1 Lemon
1 cup diced Onions
6 cups diced Tomatoes, preferably a meaty tomato like Romas
3 cups Granulated Sugar
¼ Cup Apple Cider Vinegar
1-1/2 teaspoons ground allspice
1-1/2 teaspoons ground cinnamon
½ teaspoon ground cloves
Dice both zests into very small pieces.
In a large non-reactive saucepan, combine the zest, onions, and tomatoes.
Turn heat on medium.
Add remaining ingredients and bring to a boil over high heat.
Reduce heat and simmer uncovered for about one hour, until mixture is reduced to about 4 cups.
Stir frequently and be careful not to burn. Chill completely.
Keep airtight in a sealed container.
This marmalade is great on steaks, toast, biscuits and even chicken!
