Chef Lou’s Swiss Cheese Piccata
½ cup Flour
½ cup Milk
1- ½ cup Cracker Crumbs
4 slices cold swiss cheese, ½ inch thick
¼ cup melted butter
Juice of 2 lemons
Zest from 2 lemons
Pinch salt & pepper
2 tablespoons capers
1 tablespoon chopped parsley
Line a baking pan w/ waxed paper; set aside.
Place flour, milk, and cracker crumbs in separate bowls. Moving quickly, dip cheese slices into flour, into milk, and then into cracker crumbs. Be sure to completely cover cheese at each step.
Place coated cheese slices into refrigerator for at least ½ an hour.
Heat butter in a large skillet. Add cheese slices. Don’t crowd skillet.
Brown 1 minute on each side. Remove cheese slices to serving platter.
Add remaining ingredients to skillet and stir.
Pour sauce over cheese.
