Chef Lou’s Shoo Fly Pie

½ cup hot water

1 cup brown sugar

½ teaspoon baking soda

2 eggs, beaten

1-1/2 cups flour

1/3 cup butter

1/4 teaspoon salt

1 teaspoon cinnamon

¼ teaspoon ginger

¾ cup raisins

1- 9 inch Pie Shell



In a bowl, combine hot water and sugar. Stir well and add the soda and beaten eggs. In another bowl, mix the flour, butter, salt, and spices. Work until fine crumbs are formed. Turn the egg and sugar mixture into lined pie shell. Add raisins. Spread the flour mixture over the top. Bake in a preheated 450 degree oven 10 minutes, then reduce heat to 350 for about 20 minutes longer until top feels firm.

A dollop of whipped cream makes a great addition!
