2 eggs, beaten
½ cup sugar
2 tablespoons butter, melted
1 tablespoon grated orange rind
2 cups all purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ Cup orange juice
2 teaspoons cinnamon mixed with ¾ cup granulated sugar
Beat eggs in a large bowl.
Gradually add sugar, mixing well.
Stir in butter and orange rind.
Combine flour, baking powder, and salt.
Add to egg mix. Alternate with orange juice, beginning and ending with flour mix.
Let batter stand for 10 minutes.
Drop rounded teaspoonfuls of the mix into hot vegetable oil (350 degrees).
Cook fritters until golden brown, turning once.
Remove fritters from oil and while they are still hot, dip in cinnamon sugar mixture.
Makes about 3 dozen fritters
