Chef Lou Aaron’s Potato Latkes(Pancakes) w/ Horseradish
for Potato pancakes
2 cup Shredded potatoes(splashed w/ lemon juice and drained0
¼ cup chopped green onions
½ cup julienne onions
2 eggs
¼ cup milk
¼ -cup breadcrumbs
¼ -cup flour
1 teaspoon baking powder
1 teaspoon chopped parsley
½ teaspoon marjoram
Pinch nutmeg
1 teaspoon seasoning salt
1 teaspoon black pepper
1 tablespoon melted butter
Mix potatoes and both onions together in a bowl.
Set aside.
In another bowl, mix eggs and milk together.
Add remaining ingredients to the milk mixture. Mix well.
Combine with potato mixture.
Heat some oil in a skillet.
Drop about 2 tablespoons of the mixture in the oil(repeat as necessary depending on the size of your skillet).
Fry until golden on one side.
Flip & fry on other side same way.
Place on paper towels to drain.
To serve, place pancakes on plate, place horseradish sauce on top.
Makes about 16 pancakes.
for Horseradish Sauce
½ Cup Sour Cream
1- Tablespoon Straight/Pure Horseradish
Splash Lemon Juice
Method:
Mix all ingredients well and refrigerate until ready for use.
