Chef Lou's Orange & Kiwi Praline Toast

Orange and Kiwi Praline Toast

8 slices French Bread(1 loaf, slices about 1-3/4 inches thick)
1/3-cup butter, softened
2/3 cup Brown Sugar, firmly packed
¼ cup Orange Juice
2 tablespoons Orange Zest
½ Cup chopped pecans

4 Kiwi fruit, peeled and sliced
½ cup Orange Glaze(made by whisking together 1 cup sifted powdered sugar and 3 tablespoons Orange Juice)


Preheat oven to 350 degrees. Butter all slices of bread on one side.
Combine remaining ingredients, except kiwi and orange glaze, in a mixing bowl and combine well. Spread about 1 to 1-1/2 tablespoons sugar mixture on each slice of bread. Place on baking sheet and bake for about 8 minutes or until sugar starts to caramelize.

Remove from oven and fan kiwis evenly on each slice of bread. Drizzle each slice with the orange glaze. Serve immediately.

Yield: 8 servings
