Chef Lou’s Nachos Mercado Central(Central Market Nachos)

For meat filling
¼ cup melted Butter
¼ cup Chopped Green onions
½ cup Cooked Shredded Chicken or Beef
½ cup Refried Beans
2 Tablespoons Chopped Cilantro
¼ cup minced Jalapenos

12-16 Totopos(Fried Corn Chips)
½ cup Shredded Pepper Jack Cheese
½ cup Shredded Cheddar Cheese

Nopalito Salsa

Heat butter in pan. Add green onions, chicken, or beef and refried beans. Stir well. Add cilantro and jalapeno. Set aside.
Preheat broiler. Top each totopo with 1 tablespoon meat filling. Sprinkle equal amounts of the jack and cheddar cheeses on top of the meat. Place on a baking sheet and broil until cheese is melted. Serve at once with Salsa. 

Nopalito Salsa
½ cup sliced jalapenos
1 cup shredded carrots
3 cups finely shredded cabbage
2 tablespoons chopped garlic
1 cup onion, thinly sliced
1-1/4 cups sliced cactus(from a jar)
2 teaspoons whole oregano
1/3 cup white vinegar
salt to taste
Mix all ingredients in a bowl. Refrigerate for at least 30 minutes before serving
Makes 4 cups
