Chef Lou's Mediterranean Chopped Steak Mignonettes

Mediterranean Chopped Steak Mignonettes

1-1/2 pounds Ground Beef, formed into 6 patties of equal size
6 strips thin sliced bacon

1 tablespoon Cumin
1 tablespoon Kosher Salt
1 tablespoon Granulated Garlic
1 teaspoon Paprika
1 teaspoon Coriander

1-2 tablespoon vegetable oil
½ cup Sour Cream
½ cup Dijon Mustard
1 cup minced onions
1 cup Feta Cheese, crumbled
1 cup shredded Lettuce
6 tomato wedges
10-12 slices cucumber

Wrap the patties with the bacon, securing the ends with a toothpick.
Mix together the next five ingredients together in a bowl.
Coat both sides of each patty with the seasoning mixture.
Preheat the oven to 400 degrees.
Meanwhile, in a cast iron skillet, heat 1-2 tablespoons vegetable oil.
Lay the patties in the pan to sear and cook on both sides for about 1-½ minutes each side.
To finish cooking, place the entire skillet into the oven.
Cook until desired doneness.
Pull the skillet out of the oven and turn the oven onto “broil”.
Place a generous amount of feta cheese onto each patty.
Place the skillet under the top rack of the oven to melt the cheese.
To serve, Place one dollop of sour cream in the center of a plate.
Spread a dollop of Dijon on top of the sour cream.
Sprinkle some minced onions on top of the Dijon.
Lay the patty on top of the onions.
Serve with the lettuce, tomatoes, and cucumbers on the side.
Repeat the same process with the other parties.
Serves six.
