Chef Lou’s Little Nothings

Ingredients
½ cup preserves or marmalade
4 slices “Texas toast” crusts removed
¾ cup pancake mix
¼ teaspoon nutmeg
1 egg
¾ cup milk
Hot vegetable oil
Raspberry Sauce(made with ¼ cup raspberry preserves and 2 tablespoons cranberry juice)

Method

Spread preserves over each slice of bread; roll up jellyroll fashion; chill several hours. Combine pancake mix and nutmeg; mix well. Add egg and milk, mixing until smooth. Dip each bread roll into batter, and fry in hot oil until golden brown. Drain on paper towels, sprinkle with powdered sugar and serve raspberry sauce on the side for dipping.
