Ingredients
2 tablespoons Vegetable Oil
¼ Cup Bell Pepper, assorted colors, minced
¼ Cup minced Onion
1 tablespoon chopped garlic
1 teaspoon Oregano
1 teaspoon Cumin
1 teaspoon Chile powder
1 tablespoon Chopped Cilantro
1-1/2 cups Chopped Leftover Turkey (White & Dark Meat)
Salt & Pepper to taste
1/2 cup Leftover Pumpkin Pie (filling only, no crust) mixed w/ 1 tbs. sour cream
12 Tortillas, blanched in hot oil till limp
Garnish
Shredded Lettuce, as needed
Your favorite Salsa, as needed
Method
Combine peppers, onion and garlic in oil in a skillet over medium heat, stirring until onions are browning. Add oregano, Chile powder, and cumin. Stir in cilantro, turkey, salt and pepper; cook until mixture is blended well. Set aside and keep warm. Lay tortillas on flat surface. Spread 1 tablespoon pumpkin mix evenly on each tortilla. Spoon 2 tablespoons of turkey filling on each tortilla, then fold over. You can either pour salsa over taco or serve in a ramekin and dip the taco in it. Serve with shredded lettuce.
