Chef Lou’s Hush Puppies with Spicy Sauce

Chef Lou’s Hush Puppies with Spicy Sauce


1-1/2 Cup Cornmeal
1-1/4 Cup All Purpose Flour
1 Tablespoon Baking Powder
¾ teaspoon Cayenne Pepper
½  Teaspoon Salt
½  Teaspoon Black Pepper
½ teaspoon Thyme
Pinch Oregano
½ teaspoon Onion Powder

¼ cup chopped Green Onions
1-1/2 teaspoons minced Garlic

1 Cup Milk
2 Egg, Slightly Beaten
2 tablespoons Melted Butter
½ cup shredded cheddar cheese

Stir first 9 ingredients together in a bowl.
Then add green onions and garlic.
Mix milk, eggs, and butter together gently. 
Add cheese.
In a large skillet or deep fryer, heat 4 inches oil to 350 degrees.
Drop the batter by spoonfuls into the hot oil.
Cook about 1 minute each side.
Drain on paper towels.
Serve with Spicy Sauce (see recipe below)

Spicy Sauce
Mix together:
½ cup chili sauce
½ mayonnaise
juice from two lemons
¼ cup pickle relish
1 tablespoon prepared horseradish.
Refrigerate until ready to use.
