Chef Lou’s Hot Ham & Chick Pea Hero Sandwiches

  • 1 Cup Garbanzo Beans, drained
  • 1/3 cup Red Wine Vinegar
  • 1/3 cup Olive Oil
  • 1 cup diced assorted roasted Bell Peppers
  • 1-1/2 cup diced cooked Country Ham
  • ½ Cup Crumbled Gorgonzola Cheese
  • ½ Cup Diced Red Onion
  • ¼ cup minced Fresh Parsley
  • ¼ cup fresh minced Basil
  • 2 teaspoons Black Pepper
  • 1 teaspoon Herbs de Provence


  • 4 French Bread Rolls, 6 inches long, cut in half with insides scooped out
  • ½ cup cream cheese, at room temperature
  • 2 Tomatoes, sliced
  • ½ cup Parmesan Cheese

Foil for wrapping

Combine first 11 ingredients and mix well.  Spread cream cheese on inside of bread along cavity(both halves). Sprinkle parmesan cheese evenly on each half. Repeat process with other three rolls. Scoop filling (drain before placing in roll, however, save the juices!) in bottom half of roll. Pack firmly. Lay 2 tomato slices on top of filling. Lay top half of roll on top of bottom half.  Cut a piece of foil 4 inches X 8 inches. Repeat process with other three pieces. Lay sandwich in center. Fold up sides to enclose sandwich. Bake in a preheated 350 degree oven for 15-20 minutes. Take out of oven, unwrap, and serve immediately with reserved juices from filling and shredded lettuce, if desired.
