Chef Lou's Heart of Romaine Salad w/ warm Bacon & Onion Dressing
4 Hearts of Romaine Lettuce
1 tablespoon Olive Oil
1-cup thin sliced Onions
1 cup diced Cooked Bacon (8-10 strips)
¾ cup Croutons
1 Tomato, hollowed out and cut into strips
½ cup chopped Almonds (or kind you'd prefer)
½ cup Parmesan cheese
Black Pepper, to taste
1-cup vinegar & oil dressing
2/3-cup beef broth
3 dashes hot sauce
2 tablespoons sugar
In a small saucepan, heat oil. Add onions and cook for a few minutes until onions start to brown. Add bacon, vinegar & oil dressing, beef broth, hot sauce, and sugar.
Bring to a boil, and then take off heat. Drizzle hot dressing over & under romaine hearts. Sprinkle with croutons, tomato strips, Parmesan cheese, and almonds.
