Chef Lou's Fried Artichoke Hearts
1 cup Buttermilk
¼ cup flour
1 cup drained, quartered artichokes( not packed in oil, packed in water)
2 cups seasoned breadcrumbs
1 cup grated Parmesan cheeses(you can use the canister parmesan, but fresh grated is MUCH better!)
2 tablespoon chopped parsley
1-½ cup Oil
Whisk together buttermilk and flour until smooth. Dip artichokes in buttermilk batter.
Mix together the pureed croutons, Parmesan cheese, and parsley. Remove artichoke hearts from batter and drop into crouton mix. Coat well until all sides of artichoke are covered. Heat olive oil in a skillet over medium high heat. Lay artichokes in oil and fry until crisp turning frequently. Drain on paper towels and serve with aioli sauce or your favorite marinara.
TO MAKE MOCK AIOLI
MIX TOGETHER 1 CUP MAYONNAISE AND JUICE FROM 2 LEMONS
WHISK THE MAYO MIXTURE INTO 2 TABLESPOONS ROASTED GARLIC
TO MAKE ROASTED GARLIC-IN A SAUTE PAN.
HEAT 1 TABLESPOON OLIVE OIL AND 2 TABLESPOONS MINCED GARLIC AND ROAST FOR ABOUT 2 MINUTES. COOL COMPLETELY BEFORE ADDING OTHER INGREDIENTS.
