Chef Lou’s Chili con Queso

  
Ingredients
 
2 tablespoons butter, or margarine
1 cup chopped onions
1 teaspoon minced garlic
2-3 Jalapenos, chopped
1-2 Poblano Chile, chopped
2 tablespoons flour
1 cup half & half, or milk
2 cup pepper jack cheese, shredded
2 cup cheddar cheese, shredded
1 cup canned, diced tomatoes, in juice
½ cup sour cream
½ cup chopped cilantro
Salt & Pepper, to taste
 
 
 
Method
 
Heat butter in skillet.
Add onions and garlic.
Cook until onions are transparent.
Add the peppers. Lower heat.
Add flour and stir. Add ½ & ½ and cook until simmering.
Add cheeses.
Stir in sour cream and cilantro.
Add salt & pepper to taste.
Serve with chips. Makes about 5 cups.
