Chef Lou’s Carrot & Zucchini Bars

2 eggs
½ cup vegetable oil
¼ cup honey
¾ cup brown sugar
1 teaspoon vanilla extract
1-1/2 cup shredded carrots
1-1/2 cups grated zucchini 
2 cups flour
1 tsp baking powder
¼ tsp baking soda
½ tsp ground ginger
¼ tsp salt
For frosting
Whip together 8 ounces cream cheese, room temperature
With 1 cup powdered sugar & zest from 1 lemon
½ cup chopped walnuts or pecans


Preheat oven to 375 degrees. Grease a 13 X9 baking dish. Set aside.
In a mixing bowl, beat eggs oil and honey until smooth. Add brown sugar and vanilla and mix until incorporated. Add carrots and zucchini and until batter is smooth. In another bowl, mix together the flour, baking powder, baking soda, ginger ad salt. Pour the wet ingredients into the dry ingredients and mix just until combined. . Pour into baking dish and bake for 35-40 minutes until firm to the touch. Cool. Cut into 20 bars. Spread frosting on each bar individually and sprinkle the nuts on top of the frosting
