CHEF LOU'S ARTICHOKE SQUARES
¼ cup butter or margarine
1 tablespoon minced garlic
½ cup each-minced onion, red bell pepper, mushrooms
2 teaspoon each oregano & basil
½ teaspoon each black pepper & seasoning salt
1 Lb. Artichoke hearts, drained and chopped
5 ea large eggs
2-cup panko breadcrumbs
½ cup shredded mozzarella
¼ cup Fresh minced Green Onions
½ cup Parmesan cheese
2 tablespoons chopped parsley
Preheat oven to 375 degrees.
Heat the butter(or margarine) in a frying pan over medium-high heat, add the garlic, onions, peppers, and mushrooms and cook until soft, about 5 minutes. In a medium mixing bowl combine this mix with the remaining ingredients except the parmesan and parsley. Mix well and pour into a lined and sprayed baking dish. Sprinkle with parmesan cheese and parsley flakes. Bake 30 to 35 minutes, or until set in the center when lightly touched. Let cool in the pan and cut into 1-inch squares.
Serve with herbed Sour Cream(made with 1 cup sour Cream, ½ teaspoon dill weed, ½ teaspoon season salt, ½ teaspoon black pepper, juice and rind from 1 lemon.)
