What’s Cooking With Chef Lou
4 ounces grated Jack Cheese
4 ounces grated Cheddar cheese
6 ounces cooked minced Chicken /or ground, cooked Pork sausage
2 tablespoons chopped fresh Cilantro
1 teaspoon Season Salt
1 teaspoon Black Pepper
½ cup to 1 cup Flour, for dredging
3 eggs, beaten
20 pickled Jalapeno peppers, cut lengthwise in half
Cornmeal breading(see recipe below)
Mix jack & cheddar cheese, chicken or sausage, cilantro, season salt and pepper together until combined.
Stuff each pepper with mix and put the halves back together.
Dip armadillo egg in flour, then beaten egg and roll in cornmeal breading.
Fry in hot oil for about 2 3 minutes turning frequently
Bake on lightly oiled baking sheet at 350 degrees for 25 minutes or until crisp.
¾ CUP FLOUR
1 TEASPOON PAPRIKA
1 TEASPOON SALT
1 TABLESPOON PEPPER
MIX ALL INGREDIENTS WELL AND STORE IN A BUCKET
