Chef Lou’s Apple Fritters

Ingredients

  • 2 cups apples, diced
  • 1/2 cup walnuts, chopped, optional
  • 3 tbsp milk
  • 2 eggs, beaten
  • 1 tbsp butter, or margarine, melted
  • 1 tsp vanilla
  • 1 cup flour
  • 3 tbsp sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • pinch nutmeg   


Ingredients for the glaze

  • 1 1/2 cups powdered sugar, sifted
  • pinch salt
  • 4 tbsp milk
  • 1 tsp vanilla
  • 1 tbsp margarine, softened


Method for fritter batter
In a mixing bowl, combine the apples, walnuts (optional), milk, eggs, margarine, & vanilla. In another bowl, combine the remaining ingredients and mix well. Add to apple mixture and stir well.  Drop by teaspoonfuls into hot oil (about 3-4 inches deep). Drain on paper towels and dip in prepared glaze.

Method for glaze
Prepare the glaze by combining all of the glaze ingredients. After draining fritters, dip in glaze and serve warm.

Makes about 8 fritters.
