Combine in a bowl:
¼ Cup Apple Juice
¼ Cup Rice Wine Vinegar
Pinch Salt
1-Teaspoon Black Pepper
2 Tablespoons Sugar
¼ Cup Soy Sauce
1-Tablespoon Honey
1-Teaspoon Hot Sauce
½ Teaspoon Ground Coriander
½ Teaspoon Sesame Oil
Mix well and then add:
4-6 Salmon Fillets 4 ounces each
Marinate at least 2 hours.
Remove Salmon from marinade and coat each fillet with 1 tablespoon toasted Sesame Seeds.
Bake in a preheated 400 degree oven for 10-12 minutes or until fish flakes with a fork when tested.
Remove from oven and arrange salmon on serving plate.
Drizzle fillets with 1-cup oriental vinaigrette (see recipe below) and garnish with scallions, celery, and red peppers , or serve with a mixed salad.
Oriental Vinaigrette
¾ cup Italian Dressing
2 Tablespoons Soy Sauce
Juice and Zest from one Orange
1-Teaspoon Ground Ginger
1-Teaspoon Sesame oil
1 Teaspoon Toasted Sesame Seeds
1-Tablespoon Honey
1 Teaspoon Chopped Garlic
Pinch Red Pepper Flakes
Whisk together all ingredients and refrigerate until ready to use.
