Chef Lou Aaron’s Walnut Squares
INGREDIENTS
2 TABLESPOONS BUTTER
2 EGGS
1 TABLESPOON VANILLA EXTRACT
1 TEASPOON LEMON JUICE
1 CUP FIRMLY PACKED BROWN SUGAR
1/3 CUP FLOUR
PINCH BAKING SODA
PINCH SALT
1 CUP CHOPPED WALNUTS
ORANGE ICING
1 CUP SIFTED POWDERED SUGAR
3 T. ORANGE JUICE
METHOD
Melt butter in an 8-inch square pan. Set aside.
Combine eggs, vanilla and lemon extracts; Beat hard until creamy and frothy in appearance, about 2 minutes.
Add sugar, beating well.
In another bowl, combine flour, soda, and salt; stir in walnuts.
Fold into egg mixture, until just blended.
Pour mix over butter in pan. Bake in a preheated 325-degree oven for 20-25 minutes.
Place in freezer, about 45 minutes, until it firms up.
Remove from freezer. With a pie spatula, move the spatula around the bottom of the pan to loosen from pan.
Remove entire bar from [an and cut into 2-inch squares.
Drizzle the icing over the bars.
For Orange Icing
Combine powdered sugar and orange juice; stir well.
