Chef Lou Aaron’s Cinnamon Blintzes

4 pieces thick slice white bread
½ cup cream cheese
½ cup ricotta cheese
1 egg yolk
2 tbs. Sugar
¼ cup melted margarine
¼ cup brown sugar
1 tsp cinnamon
Melted secret sauce
Whipped Cream


Mix cream cheese, ricotta cheese, egg yolk, and sugar. Blend well.
Set aside.
Remove crusts from bread . Press firmly to flatten bread. Should be 1/8 inch thick. Spread ¼ cup mixture in center of flattened piece of bread. Roll up bread, being careful not to let filling escape. Roll up like a cigar. Repeat with remaining 3 slices of bread. Set aside.

In a separate pan, mix margarine, brown sugar, and cinnamon together. Roll blintzes in mixture until evenly coated. Spray baking pan with vegetable oil. Lay blintzes in pan and bake in a 350-degree oven for about 15 minutes until they start to brown. To serve, pour 2 ounces secret sauce(melted Vanilla Ice cream) on plate. Lay blintzes on sauce. Garnish with whipped cream.
