Cheesy Onion Biscuits
Start with 1/4 cup chopped onion.
Cover and microwave on high for 1-2 minutes until the onions are tender.
In a small bowl combine ¾ cup flour, 1/8 teaspoon baking powder, 1/8 teaspoon baking soda, 1/8 teaspoon salt.
Next cut in one tablespoon of shortening until the mixture resembles coarse crumbs (if you don’t have a pastry cutter you can use a fork).
Stir in ¼ cup shredded Cheddar cheese and your cooked onion.
When it’s all combined stir in 1/3 cup buttermilk just until it’s moistened.
Then on a lightly floured surface, knead 8-10 times, then pat it into a 4 inch circle and cut into four wedges.
Place 2 inches apart on a baking sheet coated with nonstick spray.
Bake at 450 for 8-12 minutes.
