Bronco Sweet Potato Raisin Muffins

Bronco Sweet Potato Raisin Muffins by Chef Brenda Makes 12 Muffins 1 ½ cups sweet potatoes, mashed ½ cup 1% milk 1 cup oats 1 cup whole wheat flour 1 tsp cinnamon 1 tsp baking powder ½ tsp baking soda ½ tsp table salt 1 large egg ¼ cup vegetable oil ¼ cup honey 1 cup raisins Preheat oven to 400° F conventional. Prepare Muffin Dough: In the mixer, using the whisk attachment, add eggs, oil, honey, milk, and oats; mix well. Turn mixer off and scrape sides and bottom of the bowl with a spatula. Mix in mashed sweet potatoes. Add flour, cinnamon, baking powder, baking soda, and salt. Mix until moistened. Turn mixer off and scrape sides and bottom of the bowl with a spatula. Mix in raisins until well incorporated. Cook Muffins: Place muffin paper cups in muffin pans and spray with cooking spray. Divide batter among 12 muffin cups. Bake 25-30 minutes or until muffins are done. Note: Muffins are very moist. Sweet potatoes can be substituted for pumpkin puree.
