Chef Lou's Baked Ricotta Doughnuts

5 Tablespoons Butter, room temperature
½ Cup Sugar
1 Egg, Beaten
½ Cup Milk
½ Cup Ricotta Cheese
2 Cups All Purpose Flour
½  teaspoon Salt
½ teaspoon Nutmeg                                                                                                                                                                                                                                                                                                                            

Melted butter, about 1/3 cup

2 teaspoons cinnamon mixed with ¾ cup granulated sugar


In a mixing bowl, cream together butter and sugar; add egg and mix well.  Add Milk and Ricotta to the mixture alternately w/the flour, salt, and nutmeg(the dry ingredients).  Fill greased muffin cups to ¾ full.  Baked in a pre-heated 350 degree oven for 20-25 minutes. 
Remove doughnuts form tin and while they are still hot, dip first in melted butter, then in cinnamon sugar mixture.

Makes 12 doughnuts.
