¼ cup brown sugar

½ cup paprika

3 tablespoons black pepper

4 tablespoons coarse salt

2 teaspoons granulated garlic

2 teaspoons onion powder

2 teaspoons celery seed

1 teaspoon cayenne pepper

2 pounds Salmon Fillets, boned and skinned

Combine all ingredients in a mixing bowl and stir(your fingers work best!). Store in an airtight jar and keep away from heat. Makes about 1-1/3 cups.

Lay salmon on a flat surface. Sprinkle rub on all sides of salmon. Rub in with your fingers. Let sit for 30 minutes before you cook. Preheat your grill or you may use a cast iron skillet. If you're using a skillet, pour about 1 tablespoon oil per salmon fillet that you cook. Cook salmon for about 3 minutes on each side, mopping with the mop sauce frequently(see recipe). Take off the grill and serve with your favorite salad(see suggested salad dressing below).

Simple BBQ Mop Sauce Ingredients

1 cup white vinegar

2 teaspoon coarse salt

2 teaspoon black pepper

1 teaspoon(or more) hot pepper flakes

½ cup thin sliced onion

2 teaspoon chopped hot pepper, like a jalapeno

Combine all ingredients in a bowl and whisk until the salt dissolves. Brush on grilled meat after the outside is seared. Best if used the same day it is made.

To make Sriracha Dressing: combine 3 tablespoons olive oil, 2 teaspoons lime juice, pinch salt, pinch pepper, and 1-2 teaspoons Sriracha hot sauce. Drizzle in salad and over salmon. if desired.
