5-Ingredient, 5-Minute Peppermint Mocha Mousse.
1 cup Rogue Mocha Porter (coffee can be used for a non-alcoholic version)
9 oz. Good Chocolate at least 70% coco, no milk or white chocolate
2 TBL Sugar
1/4 tsp Peppermint Extract
Crumbled Candy canes for topping.
Prepare two mixing bowls, one slightly larger with ice water and another that can sit inside the ice bowl so that it is well chilled metal bowls work the best.
In a small sauce pan combine beer, chocolate, and sugar, heat and wisk on low/meduim just until all melted and combined. Remove from heat and whisk in peppermint extract.
Pour into chilled bowl and whisk rapidly fluffing some air into the mix until the mixture cools and become mousse consistency, should only take a couple minutes. Portion into 4 small bowls or 6 shot glasses, top with crushed candy canes.
