These kid friendly meatloaves are a great way to pack protein into your families' dinners! I serve these with broccoli and red mashed potatoes.

1 1/4 lbs lean ground beef - (93% or higher)
1/2 cup onion
1 egg
2 tsp avocado oil
1/2 cup of cooked and chopped bacon
1/3 cup of panko bread crumbs
1 tablespoon yellow mustard
1 1/2 tablespoons Worcestershire sauce
3/4 tsp salt
3/4 tsp pepper
1/2 cup of shredded cheddar cheese
1/2 cup ketchup
4-6 slices of bread (any kind)


Preheat oven to 350, line bottom of 9x13 casserole dish with bread. (this will soak up all the leftover fat from the mini meatloaves)

Heat avocado oil and cook onion for 4-5 min. Remove from heat and add Worcestershire sauce, and mustard. Stir.

In large bowl or mixer - add beef, bacon, bread crumbs, salt, pepper, egg, and cheddar cheese. Mix together until well blended.

Form 4 mini meatloaves and place on top of bread in pan. Add ketchup to the top of the meatloaves. Bake 50-60min - or until cooked through. Enjoy!!
