3 cups sifted Powdered Sugar

¼ cup Pumpkin

¼ cup creamy Peanut Butter

1 egg white, slightly beaten

1 tablespoon butter, room temp

Pinch of salt

1 teaspoon vanilla extract

½ cup finely chopped dry roasted peanuts

Chocolate covered espresso beans, optional, as needed


Combine first 7 ingredients, mixing well. Refrigerate for about 15 minutes. Shape mixture into 1 inch balls: roll each in peanuts or powdered sugar. I also like to split the balls in half, place a chocolate covered espresso bean in the middle, and put back together. Chill about a half an hour before serving. They’re YUMMY!
