Ingredients

3 tablespoons butter
1 cup minced onions
1- 1/2 cups flour
1-1/2 teaspoons baking powder
½ teaspoon salt
½ teaspoon black pepper
1 cup shredded cheddar cheese
1 cup shredded parmesan cheese
1 cup milk
1 teaspoon maple syrup
2 eggs
1 cup finely chopped ham
1 tablespoon poppy seeds


Method

Melt butter in a skillet over medium heat: add onion, and sauté for 5 minutes until onions are almost burning. (Some can even be black). Combine the flour, baking powder, salt, pepper, and half the cheddar & Parmesan cheeses. Make a well in the center of the bowl. Pour the milk and syrup in the center of the well. Add the egg. Whisk them together, then, fold into the dry mix. Stir in onion, then add ham. Spoon into lightly greased muffin pans about 2/3 full. Sprinkle with remaining cheeses. Sprinkle with poppy seeds. Bake in a preheated 350-degree oven, for 15-18 minutes. Cool slightly before removing biscuits from pan. Makes 12 biscuits
