If you've driven around Boise and Meridian recently, you may have noticed a black and yellow food truck called Cupbop. It's been in the Treasure Valley for only a few months, but it has quickly gained popularity. Now, Cupbop - which started in Utah - is opening its first Idaho store in a popular shopping center in Meridian.

Cupbop puts a unique twist on Korean food with special ingredients, amazing sauces, and the contagious energy of their staff. If you're looking for a great time with great energy, this is your place!

On the menu you have different cups you can order. Now these aren't your ordinary cups, they are a huge serving! You start with rice then your choice of cabbage or lettuce (I prefer the crunch of the cabbage), then you choose a protein ranging from pork and chicken to Bulgogi, which is a fan favorite. You'll also want to get an order of Mandoo, or fried dumplings.

Then comes the part where you as the customer can get creative! When it comes to sauces, Cupbop has it down to a science. You can take it easy with a level 1, which is more sweet than spicy, or you can crank it up to a level 10, which will make all the employees yell "fire in the hole!".

Cupbop is located in Meridian on the corner of Chinden and Linder, right next to Sport Clips. Store hours are from 11 a.m. to 9 p.m. Monday through Friday. It is closed Sunday. The truck will still be operating.
